Korean Oxtail Soup is a delicious combination of onion, garlic, bacon, leeks, turnips, carrots, sake, rice vinegar, soy sauce, oxtail, miso, shiitake mushrooms, champignons de Paris (Parisian mushrooms), leeks, cilantro, Katsuobushi (optional), soba noodles and olive oil.

Ingredients For the broth 1 kilogram beef oxtail cut through the bone into serving size pieces (have the butcher do this for you) 6 cloves garlic 3 stalks scallions tied into a knot 1 tablespoon salt (you may need more)

Bring a large pot of water to boil; carefully place oxtails in water and boil 15 minutes. Remove from heat and rinse to remove scum. Return oxtail to clean pot and cover with water. Add carrots, daikon, ginger, onion and burdock. Cook for 2 hours or until meat is very tender.

Soak the ox bones and the beef in cold water for 20 minutes to remove any blood. Rinse bones in cold water a couple of times to remove any bone chips. Drain the water.
